Kinley and I were baking the other day and stumbled upon a perfect way to make healthy pie crust, filling, and topping without any refined sugar or artificial ingredients. This is about as healthy as you can get without making the pies taste weird.

Crust

  • 1 cup flour
  • 1/2 cup softened butter or coconut oil
  • pinch of salt
  • 1-2 tablespoons raw honey or agave (change based on preferences)
  1. Preheat oven to 375 degrees.
  2. Combine ingredients and knead until well combined.
  3. Grease pie pan with leftover butter or oil.
  4. Flatten dough into pan and press up the sides of the pan.
  5. Cook crust for 15 minutes.
  6. Transfer crust to freezer for 5 minutes for cooling.

Filling

  • 3 1/2 cups berries (any type or mixed)
  • 1 tablespoon raw honey or agave
  • 1 tablespoon cornstarch
  • pinch of salt
  1. Heat ingredients in saucepan.
  2. Mash berries with potato masher or fork until medium smooth.
  3. Stir well, then pour into cooled crust.

Topping (Optional)

  • 1 cup rolled oats
  • 1/4 cup crushed pecans
  • pinch of salt
  • 1-2 tablespoons of raw honey or agave (change based on preferences)
  1. Heat sweetener and pecans in saucepan until coated and sticking.
  2. Lower heat, add rolled oats and salt.
  3. Place topping on a sheet pan or plate for cooling.
  4. Crumble cooled topping over pie.
